The precision sharp blade will allow you will yield more meat when using this carving knife by cutting closer to the bone.  The hollow ground blade ensures a precision concave surface for maximum edge retention.  It is made from surgical grade, T420 high carbon stainless steel that is hand sharpened creating a razor sharp edge.  It has a 6-5/8 inch blade and measures 11 inches overall.
